Jalapeño Popper Flatbread

On occasion I come across recipes I just have to share with you all.  Most of the recipes I share are ones I could use items from my staples and food storage to give you ideas of things you can cook or bake with in your stored items.

After trying a  Jalapeno Popper Flat Bread recipe I found at DixieChikCooks.com, I decided this was another recipe I could not keep to myself and with her permission I can now bring to you!

Ingredients

Flatbread:

  • 1 tsp active dry yeast
  • 2 1/3 cups warm water (not too warm)
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1/3 cup olive oil plus more for oiling the bowl
  • Popper Dip
  • 1/2 pound bacon, cooked and crumbled

Directions:

  1. Sprinkle yeast over the warm water; let sit for 10 minutes until frothy.
  2. In a stand mixer, combine flour with salt.
  3. With mixer on low, drizzle in olive oil then yeast/water mixture.
  4. Mix on low/medium until a dough ball forms.
  5. Transfer to a bowl drizzled with olive oil; cover and refrigerate until ready to use.
  6. Preheat oven to 500°F.
  7. Take half of the dough from the fridge and spread it out thin on an oiled lined baking sheet.
  8. Drizzle with olive oil and spoon about 1/3 of the popper dip (That's what I had left when I made this) on the dough.  Of course, you can use as much as you want.
  9. Sprinkle bacon over top and bake for 15 minutes, or until corners of bread are slightly brown.

Directions:

  • In a large bowl, beat the first five ingredients until blended; spread into an un-greased 9-in. pie plate. Sprinkle with Parmesan cheese; top with bread crumbs. Bake at 400° for 25-30 minutes or until lightly browned. Serve with peppers and chips. Yield: 16 servings.

This Jalapeño flat bread and dip turned out to be an amazing hit in our home and did not last long.  We also discovered another appetizer hit using this popper dip as well.  When we go to Sam's or Walmart we buy Pretzel Crisps to snack on. They are a thin, light pretzel that are healthier than potato chips, but have much of the same crunchiness.  Spreading some of the popper dip on them turns them into mouth-watering bits of heaven!
